Chive and Cheese Muffins

Ingredients

  • 2 cups all purpose flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1/2 tsp baking soda

  • 1 cup plain Greek yogurt

  • 1/4 cup milk

  • 1/4 cup olive oil

  • two large eggs

  • 1/2 cups of shredded cheddar cheese

  • 1/4 grated parmesan (preferable fresh)

  • 1/4 cup chopped fresh chives

Instructions

  1. Preheat oven to 375

  2. Line a 12 cup muffin tin with paper liners or lightly grease it.

  3. Mix dry ingredients in a large bowl whisk together the flour, baking powder, salt, and baking soda.

  4. Combine wet ingredients in another bowl, with the Greek yogurt, milk, olive oil, and eggs until smooth combine

  5. Pour the wet ingredients into the dry ingredients. Stir gently until just combined avoid over mixing.

  6. Fold in the shredded cheddar cheese, parmesan, and chopped chives until evenly distributed.

  7. Divide the muffin batter evenly a lot among the prepared muffin cups, filling each about 3/4 full.

  8. Place the muffins in the oven and bake for 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  9. Allow muffins to cool in the tin for about five minutes before transferring them to a wire rack to cool completely.
