Taco Stuffed Sweet Potatoes
Ingredients:
2 large sweet potatoes
1 pound ground turkey or Grassfed beef
1 tablespoon avocado oil
1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt (can use a taco seasoning packet to save time)
1/2 cup black beans (optional for extra protein)
1/2 cup shredded cheese
1/2 an avocado sliced
1/4 cup Greek yogurt
green onions, lime wedges, salsa and or hot sauce for serving.
Instructions:
Preheat oven to 400. Pierce sweet potatoes with a fork and bake for 45 minutes. heat avocado oil in a skillet and cook ground turkey/ beef with spices until browned. Add black beans if using. Slice open the potatoes and stuff with a seasoned meat mixture. Top with cheese avocado and greek yogurt. Serve with salsa, lime or hot sauce.
Crispy Salmon Bites with Avocado Ranch Dip
Ingredients:
1 lb salmon, skin removed, cut the bite-size cubes
1 tablespoon Dijon mustard
1/2 cup almond flour
1/2 tsp smoked paprika, garlic powder, salt and pepper
Avocado Ranch Dip:
1/2 an avocado
1/4 cup Greek yogurt
2 tbsp clean mayo (avocado or olive)
1 tablespoon fresh dill
1 teaspoon lemon juice
1/2 tsp garlic powder
1/4 cup water (to thin if needed)
Instructions: Toss salmon cubes and Dijon mustard. Mix almond flour, paprika, garlic powder, salt and pepper in a bowl. Coat salmon cubes in the mixture. Pop in an air fryer at 375 for 8 - 10 minutes until crispy. Blend all dip ingredients until smooth. Serve with salmon bites, enjoy!
Greek Chicken Meatball Bowls with Whipped Feta
Ingredients:
1lb ground chicken
1 red onion (diced)
cooked quinoa or brown rice
1 cucumber (cut into half moons)
handful cherry tomatoes (halved)
Kalamata olives (halved)
1/2 tsp garlic powder, oregano, and salt
Whipped feta:
1 block feta
1/3 c Greek yogurt
1 tbsp olive oil
juice of one lemon
salt to taste
Instructions:
Mix chicken, spices, onion, and parsley from into meatballs and bake at 375 for 10 to 15 minutes.
While meatballs bake, blend whipped feta in a food processor, or handheld mixer. If hard to mix add more Greek yogurt until smooth.
Build bowls rice, meatballs, cucumbers and tomatoes, and a big dollop of whipped feta on top
Optional drizzle with olive oil, fresh herbs, and lemon zest.
