Lemon Herb Chicken Meatballs with Whipped Feta

INGREDIENTS

Lemon Herb Meatballs

1 lb ground chicken

1 egg

1/4 cup bread crumbs

2 cloves garlic, minced

zest of one lemon

1 tbsp fresh parsley or dill, miced

salt and pepper to taste

Mix meatball ingredients and form into small balls. Bake at 400°F Bake for 10 - 15 minutes.

Whipped Feta Dip

1/2 cup feta cheese

1/4 cup plain Greek yogurt

1 tablespoon olive oil

salt to taste

Blend dip ingredients in food processor or with hand held mixer, until smooth. Top with minced herbs and serve with meatballs.
