Chocolate Raspberry Overnight Oats

A perfect mix of indulgence and nourishment, these Chocolate Raspberry Overnight Oats are rich in antioxidants, fiber, and omega-3s. It’s a great make-ahead breakfast, snack, or even dessert when you’re craving something sweet but still want to keep it clean.

Ingredients:

  • 1 ½ cups unsweetened almond milk (or milk of choice)

  • 1 c cup rolled oats

  • 2 tbsp unsweetened coco powder

  • 1-2 tbsp maple syrup or raw honey (adjust to taste)

  • ½ tsp vanilla extract

  • Pinch of sea salt

  • ½ cup fresh raspberries (plus more for topping)

  • 1 tbsp dark chocolate shavings or cacao nibs (optional)

Instructions:

  1. In a bowl or jar, whisk together the almond milk, coco powder, maple syrup, vanilla, and sea salt until smooth.

  2. Stir in the oats and mix well. Let sit for 5 minutes, then stir again to prevent clumping.

  3. Cover and refrigerate for at least 3 hours or overnight, until the oats thicken.

  4. Before serving, mash the raspberries slightly and stir them into the pudding.

  5. Top with extra raspberries and a sprinkle of dark chocolate shavings or cacao nibs.
