Chocolate Raspberry Overnight Oats

Ingredients:
1 ½ cups unsweetened almond milk (or milk of choice)
1 c cup rolled oats
2 tbsp unsweetened coco powder
1-2 tbsp maple syrup or raw honey (adjust to taste)
½ tsp vanilla extract
Pinch of sea salt
½ cup fresh raspberries (plus more for topping)
1 tbsp dark chocolate shavings or cacao nibs (optional)
Instructions:
In a bowl or jar, whisk together the almond milk, coco powder, maple syrup, vanilla, and sea salt until smooth.
Stir in the oats and mix well. Let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 3 hours or overnight, until the oats thicken.
